Whole Cow Processing: How It Works
Buying a whole cow for processing is an excellent way to stock your freezer with high-quality, locally sourced beef. Below, we outline the entire process, including deposits, pricing, and how we determine costs based on hanging weight.
1. Placing Your Order & Deposit
To reserve your whole cow, a non-refundable deposit is required at the time of ordering. This deposit secures your animal and is applied toward the final cost of processing. The remaining balance will be calculated based on the final hanging weight of the cow.
2. Understanding Pricing
Our beef is priced based on the hanging weight of the animal. Hanging weight refers to the weight of the carcass after the initial processing (removal of hide, head, hooves, and organs).
Estimated Costs:
Our current rate is $8.00 per pound of hanging weight.
A whole cow will yield 700-900 hanging weight.

Final Cost = Hanging Weight × Price per Pound
3. Hanging Weight & Final Payment
Once the cow has been processed, we will notify you of the final hanging weight. The final price is then determined using this weight, and your remaining balance must be paid before pickup or delivery.
4. Custom Butchering & Cut Preferences
When purchasing a whole cow, you have the opportunity to customize your order. You can specify your preferred cuts, steak thickness, roast sizes, and packaging options. We will contact you directly to complete the cut sheet to provide to our processor to ensure your beef is cut and packaged to your specifications. ***Whole Cows Only***
5. Pickup & Delivery
Once the beef has been aged, cut, and packaged (typically a 2-3 week process), we will notify you when your order is ready for pickup. If delivery is available in your area, we can arrange for a scheduled drop-off at an additional fee.

Deposit is non-refundable and does not reflect half down. Final balance due will be based on hanging weight less your deposit. You will receive an invoice once your order is ready, once final payment is made your order will be available for pickup or delivery.
When your order is ready, you will need to bring coolers to prevent thawing. Our meat is flash frozen which can be stored in a freezer for 18-24 months. Freezer space for a 1/4 cow is approximately 7 cubic feet, for a 1/2 cow approximately 15 cubic feet, and for a whole cow approximately 30 cubic feet. Meat is flash frozen to protect flavor, tenderness, nutrients, and freshness.
Grass-fed cows may require a longer processing time as these cows take longer to grow.
